The oven
Dough proved slow, sauce from whole tomatoes, fior di latte torn by hand. Pizzas go in a wood-fired oven and come out in a couple of minutes with a blistered, chewy edge.
Gluten-free bases are available, and there’s always a vegetarian pizza or two on the list.
